Preheat oven to 350°F. Liberally grease 9" loaf pan with oil. Set aside.
In medium bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, and nutmeg. In separate large bowl, combine oil, sugars, vanilla and eggs until blended. Gradually add flour mixture until just barely combined. Slowly fold in zucchini and nuts. Do not overmix batter as this will lead to tough bread.
Spoon batter evenly among pan(s). Bake 50-60 minutes or until top is light golden brown and toothpick inserted in center comes out clean or with moist (not wet) crumbs. Cool before serving.
