Preheat oven to 350°F. Grease two loaf pans.
Place sifter basket over medium bowl and place all dry ingredients inside. Sift to combine.
In separate large bowl, beat together oil & sugar. Add eggs, one at a time, beating until incorporated. Stir in vanilla, followed by zucchini. Put 1/2 dry ingredients into wet and stir to combine. Pour in 1/2 cup milk, mix. Stir in last 1/2 flour mixture, followed by remaining milk, then chocolate chips or any other additions.
Divide mixture into loaf pans and bake 50 minutes - 1 hour until inserted toothpick comes out clean.
Freeze 'extras' for any unforseen chocolate emergencies.
