Watermelon Mint Vinaigrette
Ingredients:
- 3 Tbsp Sherry Wine Vinegar
- 2 cups Watermelon, cubed & seeded
- 1/2 tsp salt
- fresh ground black pepper to taste
- 2/3 cup Lime Olive Oil
or mild Extra Virgin Olive Oil
- 1/3 cup mint, torn
Directions:
Purée watermelon, vinegar, salt & pepper in a blender. While blender is running, slowly drizzle in olive oil to emulsify. Add mint and pulse to combine.
