Tzatziki

On Tap Oil & Vinegar Tzatziki with Extra Virgin, Garlic, or Lemon Olive Oils, Apple Cider Vinegar, & Souvlaki Spice Blend

Peel cucumber, slice lengthwise, and scoop out seeds. Grate into mesh strainer set over a bowl. Cover and let drain overnight in fridge. (Alternatively, grated cucumber can be squeezed in clean kitchen towel to remove moisture). If Greek yogurt isn't overly thick, this can be strained overnight in the fridge with cheesecloth, if desired.

Combine yogurt with garlic, oil, vinegar, & salt. Cover and refrigerate 3-4 hours or overnight.

Before serving, stir in cucumber and Souvlaki Spice Blend. Garnish with green onions and dill. Serve cold with pita bread and pork skewers.
