Preheat oven to 250°F. Line baking sheet with aluminum foil.
In large bowl, toss sweet potatoes with oil until fully coated. Place slices on baking sheet, season with salt and pepper. Bake 1 hour per side until potatoes are golden and crispy. Set aside to cool.
Layer sweet potato slices with cheese, walnuts, rosemary, and drizzle with honey.
