with Spicy Calabrian Pesto Olive Oil & Gordal Olives
Preheat oven 375°F. Cover baking sheet with foil, set aside.
In bowl, mix olives, onions, sundried tomatoes, spinach and feta cheese.
Cut salmon in center horizontally to create a pouch. Rub inside & outside with oil, and season with salt & pepper. Stuff with olive mixture.
Arrange fillets on baking sheet and bake until salmon is cooked through, 30-40 minutes.
Serve hot over rice.
