Golden Roasted Zucchini & Squash

On Tap Oil & Vinegar Roasted Zucchini & Squash With Garlic Extra Virgin Olive Oil

Preheat oven to 400°F. Place parchment paper or aluminum foil onto 13" baking sheet.

In small bowl whisk together oil, parsley, and oregano. Place zucchini, squash, and tomatoes in large mixing bowl. Pour oil mixture over top and gently toss with hands to evenly coat.

Pour onto baking sheet and spread into even layer. Season with salt and pepper and sprinkle Parmesan over top. Roast in preheated oven 25-30 minutes until veggies are tender and Parmesan is golden brown.
