Piri Piri Marinade
A delicious marinade to use on chicken (see below). Try as a spicy dipping sauce, or on potatoes!
Ingredients:
- 5-10 Thai red chilis
- 3 shallots, chopped
- 4-6 garlic cloves, chopped
- medium red bell pepper, chopped
- 2 bay leaves, crumbled
- 4 Tbsp tomato paste
- 1 1/2 Tbsp Champagne or Red Wine or Apple Cider Vinegar
- 2 Tbsp lemon juice
- 1 tsp lemon rind
- 1 Tbsp Piri Piri spice blend (more if you like heat)
- 1/2 Tbsp dried Oregano
- 2 tsp paprika
- 1 1/2 tsp salt
- 1/3 cup Garlic Olive Oil (or Cayenne Olive Oil for extra spiciness)
Directions:
To adjust level of spiciness, change amount of chilis, amount of Piri Piri spice blend, and type of olive oil used.
Place all ingredients up to olive oil in blender or food processor and pulse to combine. With motor running, slowly drizzle in olive oil until sauce is smooth and emulsified.
