Place pineapple, habanero, ginger, onion, & water in a saucepan. Simmer 2-5 minutes until ingredients are mostly submerged. Stir in salt and sugar. Gently simmer 5-10 minutes until onions and peppers have softened.
Pour into blender. Add vinegar, lime juice, marjoram & cumin. Puree until smooth. Once cool, pour into bottles and refrigerate.
Use on chicken wings, pork souvlaki, roasted potatoes, rice, tacos, in guacamole, or drizzled on cheese for a charcuterie.
