Peach Caprese Salad
with Extra Virgin Olive Oil & Peach White Balsamic Vinegar
Ingredients:
- 8 oz. good quality whole milk ricotta
- Large ripe peach, sliced in 1/4" slices (8 slices)
- 1/4 cup fresh torn basil leaves
- 2 Tbsp Peach White Balsamic
- 2 Tbsp Extra Virgin Olive Oil
- salt & pepper to taste
Directions:
Arrange peaches on platter sandwiching 1 Tbsp ricotta between slices. Whisk olive oil together with white balsamic vinegar and drizzle over peaches and ricotta. Season with salt and pepper and scatter fresh basil leaves over peaches.
