Whisk all dressing ingredients in medium sized bowl until smooth, thickened, and slightly emulsified. (Or process in blender until smooth.)
Slow poach chicken: slice chicken, season with salt, and boil.
Boil water in medium pot, remove from heat, add glass noodles, and soak until tender, 3-5 mins. Drain and rinse in cold water.
Serve noodles in a bowl topped with chicken, edamame, carrots, cucumbers, scallions, red cabbage and Key Lime Miso Sauce. Top with roasted peanuts and cilantro.
