Lemongrass-Mint Mojito
Perfect for the upcoming patio season.
Ingredients:
- 1 cup water
- 1 cup granulated sugar
- 6 fresh mint leaves, + sprig for garnish
- 1 1/2 Tbsp simple syrup (see below)
- 1 Tbsp fresh lime juice (save half a lime - cut into wedges for garnish)
- 1 Tbsp Lemongrass-Mint White Balsamic
- 2 oz light Rum
- club soda
Directions:
SIMPLE SYRUP
Bring water to simmer in saucepan over medium-high heat. Add sugar and stir until completely dissolved. Remove from heat. Set aside to cool to room temperature. Pour syrup into clean, sealed container and refrigerate. Makes 1 1/2 cups and keeps two months or longer in refrigerator.
MOJITO
Place mint, simple syrup, lime juice, and balsamic in wide glass. With wooden spoon, muddle together to form a blended syrup. Add ice cubes, then pour in Rum and club soda. Mix. Garnish with mint leaves and limes wedges.
