Herb Marinated Shrimp
with Lemon Olive Oil
Ingredients:
- 2 lb large shrimp, peeled and deveined (16-20)
- 3 garlic cloves, minced
- 1 medium yellow onion, diced
- 1/4 cup parsley, minced
- 1/4 cup fresh basil, minced
- 1 tsp mustard
- 1 tsp Dijon mustard
- 2 tsp kosher salt
- 1/2 tsp fresh ground black pepper
- 1/4 cup Lemon Olive Oil, + extra for grill
Directions:
Combine all ingredients and allow to marinate overnight.
Pre-soak wooden skewers.
Thread shrimp onto skewers.
Heat grill and brush with oil to prevent shrimp from sticking.
Grill 1-2 minutes on each side. Serve over mixed greens or rice.
