Tropical Grilled Chicken Wings with Mango Pineapple Salsa
with Chipotle & Garlic Olive Oils, Mango White & Blackberry Ginger Balsamic
Ingredients:
WINGS:
- 4 lbs chicken "party" wings
- 2 Tbsp Garlic Olive Oil
- 1/2 tsp black pepper
- 1/2 cup Blackberry Ginger Balsamic
- 1/4 cup soy sauce
- 1 Tbsp mustard
- 1 can Coke or Pepsi soda
GRILLED MANGO PINEAPPLE SALSA:
- 1 pineapple, peeled, cored, sliced
- 1/2 sweet onion, chopped
- 2 large mangoes, peeled and chopped
- 1 Roma tomato, chopped
- 1/3 cup fresh cilantro, chopped
- 1/2 Tbsp Chipotle Olive Oil
- 3/4 tsp salt
- 1/2 Tbsp Mango White Balsamic
- 3/4 tsp lime zest
- 3 Tbsp fresh lime juice
Directions:
WINGS:
Combine soy sauce, balsamic, pepper, olive oil, soda and wings in a large, zip-top bag. Close bag and refrigerate 4 hours to overnight.
Preheat an outdoor grill to medium heat.
Remove chicken wings from marinade and pat dry. Cook wings on preheated grill, turning occasionally, until chicken is well browned and no longer pink, 25 to 30 minutes.
GRILLED MANGO PINEAPPLE SALSA:
Preheat grill to medium-high heat (350°-400°F). Grill pineapple and onion 5 minutes or until well-marked but not cooked through. Chop and place in large bowl.
Whisk together Chipotle Olive Oil and Mango White Balsamic. Toss in mangoes, pineapple, and remaining ingredients. Cover and chill. Use to top chicken wings (also great on fish).
