Green Goddess Dressing
Great on a Cobb Salad
Ingredients:
- 1 cup flat leaf parsley leaves
- 1 cup packed baby spinach leaves
- 3 Tbsp Oregano or Lemon White Balsamic
- 3 Tbsp chives, minced
- 1 Tbsp fresh lemon juice
- 1 Tbsp Dijon Mustard
- 1/2 cup Ginger and Black Garlic Olive Oil
- 1/2 cup Extra Virgin Olive Oil
- Kosher salt
- freshly ground pepper, to taste
Directions:
Combine all ingredients except olive oil in blender or food processor. Process to create a thick green paste. Add olive oil while motor is running, and process briefly until just emulsified. Refrigerate in sealed container for up to a week.
Makes 1 1/2 cups
