Season lamb chops on both sides with salt and pepper. Sear lamb chops on all sides in hot skillet with Extra Virgin Olive Oil on medium-high heat. Remove chops and set aside.
Add garlic to skillet and cook until fragrant. Lower heat to low. Add honey, soy sauce, balsamic, sesame oil, and chicken stock. Let sauce come to rapid boil, then add chops. Cook lamb to desired temperature.
