Cucumber Dill Vinaigrette
Love dill, quick and easy.
Ingredients:
- 3 Tbsp Sherry Wine Vinegar
- 2 cups Cucumber, seeded & chopped
- 1/2 tsp salt
- fresh ground black pepper, to taste
- 2/3 cup Dill or Lemon Olive Oil or mild Extra Virgin Olive Oil
- 3 Tbsp dill, chopped
- 3 Tbsp mild Extra Virgin Olive Oil
Directions:
Pure´ cucumber, vinegar, salt & pepper in a blender. While blender is running, slowly drizzle in olive oil to emulsify. Add dill and pulse to combine.
