Caesar Salad Crostini
with Garlic & Extra Virgin Olive Oils
Ingredients:
- 1 Baguette - sliced 1/4" thick
- 3/4 cup Extra Virgin Olive Oil
SALAD DRESSING
- 1/2 cup Garlic Olive Oil
- 1/4 cup Parmesan cheese, finely grated + extra for garnish
- Kosher salt and freshly ground black pepper
- 1 egg yolk
- 1 Tbsp lemon juice
- 4 anchovies
- 1 tsp Worcestershire sauce
- 2 Romaine lettuce hearts, thinly chopped
Directions:
Drizzle Extra Virgin Olive Oil on baguette slices and toast in oven until golden brown. Set aside.
Make Salad Dressing:
Combine egg yolk, lemon juice, anchovies, Worcestershire sauce, and Parmesan in blender or food processor and pulse to combine. While running slowly, drizzle in garlic olive oil until smooth emulsion forms. Season generously with salt and pepper.
Toss chopped romaine in dressing and top baguette. Shave fresh Parmesan cheese on top and serve.
