Cheddar Cheese Crackers
with Garlic Olive Oil (or White Truffle Oil)
Ingredients:
- 2 1/2 cups all-purpose flour, plus more for rolling out dough
- 1/4 tsp baking powder
- 1 1/2 tsp salt
- 1/2 tsp freshly ground fine black pepper (optional)
- 1 1/2 cups aged, shredded sharp cheddar cheese
- 1 1/2 cups shredded Asiago cheese
- 1 cup Garlic Infused Olive Oil (try experimenting with other infused olive oils)
Alternatively, For Cheesy White Truffle Crackers
replace cheddar cheese with:
- 1 1/2 cups shredded Parmesan cheese
replace Garlic olive oil with:
- 3/4 cup Extra Virgin Olive Oil
- 2 Tbsp White Truffle Oil
Directions:
Combine flour, baking powder, salt, and pepper in bowl of food processor. Pulse a few times to distribute. Add cheeses and pulse again to finely chop. Add oil and continue to pulse until incorporated thoroughly.
Gather and press dough into two flat discs. Wrap each disc and chill for an hour.
Preheat oven to 425°F. Line a baking sheet. Roll out one disk at a time 1/4" thick. Cut into squares, rounds, or shapes, as preferred.
Bake 9-11 minutes until edges become golden.
