Bourbon-Peach Vinaigrette
A little different, A lot delicious!
Ingredients:
- 1 tsp Peach White Balsamic Vinegar (or Champagne Wine Vinegar)
- 1/2 cup chopped thawed frozen peaches
- 1 Tbsp bourbon
- 1 tsp dijon mustard
- 1/2 teaspoon kosher salt
- 1/3 cup mild Extra Virgin Olive Oil
- 1/4 cup chopped toasted pecans
Directions:
Purée first 5 ingredients in a blender. While blender is running, slowly drizzle in olive oil to emulsify. Stir in nuts.
Pour over favourite salad mix or try as a marinade/sauce for pork.
