Cardamom & Persian Lime Olive Oil Cookies

On Tap Oil & Vinegar Persian Lime Cookies Loaded with flavor despite their short ingredient list, dairy-free, and a snap to make. Enjoy them with a fresh pot of tea like our classic Earl Grey or Long Island Strawberry Green Tea.

Preheat the oven to 350° F.

In bowl of a stand mixer fitted with paddle attachment, add sugar, oil, and eggs. Beat on medium speed until thick and creamy, about 3 minutes.

In separate bowl whisk together flour and remaining dry ingredients. Add dry ingredients to wet ingredients in three additions beating in between until no dry flour remains.

Scoop approximately 2 tsp dough per cookie, and place in rounded mounds about 1 1/2" apart onto well-greased or parchment lined cookie sheet. Bake in center of oven 10 minutes.

Increase heat to 425°F and bake an additional 2 mins to create crackly, golden brown exterior. Remove cookies to a rack to cool. Repeat with remainder of dough.

Yields about 48 cookies
