In a large bowl, mix flours together. Make a well in center of bowl and add eggs, olive oil, and dill. Begin incorporating flour into eggs a little at a time. Mix until it forms a very loose, messy dough. Finish by kneading dough by hand until it forms a smooth dough. Wrap and allow to rest at room temperature for 1 hour. Roll out with pasta machine or rolling pin and cut into desired shapes.
