Cauliflower Stir-Fry with Peanuts

with Extra Virgin Olive Oil On Tap Oil & Vinegar Caramelized Broccoli & Cauliflower Croquettes

Directions:

Preheat broiler. Cook rice in 1 1/2 cup water, set aside.

Meanwhile, toss cauliflower with 2 Tbsp oil and generous pinch of salt and pepper. Lay out on baking sheet and broil, stirring occasionally until lightly charred and tender, approximately 10 mins.

Heat remaining oil in large nonstick skillet over high heat. Add peanuts and stir about 1 minute. Set aside. Add snow peas, bell peppers and ginger to skillet. Stir occasionally until crisp-tender, 1-2 minutes. Add scallions and cauliflower, toss. Add chili sauce, soy sauce, and continue to cook, stirring often until vegetables are glazed (about 2 mins).

Fluff rice with fork. Top each serving with stir-fry, peanuts, and cilantro.
