Rinse shrimp; pat dry with paper towels.
Preheat oven to 400°F. Whisk marinade ingredients except water in large bowl. Toss potatoes with marinade and arrange in single layer on large baking sheet. Add water to bottom of pan. Cook 40 minutes until water is evaporated and potatoes are crusty-golden brown. Adjust seasoning as necessary and serve sprinkled with fresh parsley.
Serves 6 as side dish.
